Hamburg Parsley

Petroselinum crispum var. tuberosum

Grown for its smooth, parsnip-like taproot rather than its leaves, Hamburg parsley delivers a mild parsley flavour with real nutritional depth. Cold-hardy and reliable, it stores throughout winter — but it needs a long growing season and loose, stone-free soil to form properly.

Growing

Direct sow outdoors as early as the soil can be worked — parsley root needs a long season and does not tolerate transplanting. Prepare a deep, stone-free bed so the taproot can develop without forking. Sow 1 cm deep and thin to 10 cm apart once seedlings are established; cover immediately with insect netting to protect against carrot fly. Pre-soaking seeds overnight in lukewarm water can speed up germination, which takes 2–4 weeks. Autumn sowing before the ground freezes also works well, with plants pushing through in early spring.

Care

Water consistently; parsley root is thirsty and drops in quality without steady moisture. Feed with a balanced fertiliser every 3–4 weeks. Remove any side shoots from around the base of the swelling root from July onwards to channel energy into the main taproot. Mulch to retain moisture and keep the bed weed-free.

Harvest

Harvest from September onwards when roots are 5–8 cm across. In mild winters, leave in the ground under a thick straw mulch until needed. Alternatively lift, trim, and store in a cool cellar in barely damp sand for up to 3 months. Handle carefully to avoid bruising.

In the kitchen

Scrub and peel. Roast as wedges at 200 °C until caramelised, or simmer in stock and blend into a silky purée. Slice raw into remoulade with mustard mayonnaise. Add to soups, gratins, and stews as a parsley-flavoured winter vegetable. The leaves are also edible and can be used like flat-leaf parsley.

Storing

Hamburg parsley stores excellently. Keep unwashed in a cool cellar (0–4 °C) in damp sand or sawdust for 3–4 months. Alternatively store in the fridge in a perforated plastic bag for 2–3 weeks. Freeze peeled, sliced roots after blanching for 3 minutes for 10–12 months. Dried parsley root keeps for 1 year.
