Switchgrass

Rödhirs (Panicum virgatum), sold as the ornamental variety 'Fontaine', is an annual decorative grass grown for its fountain-like sprays of slender branches and graceful flower stems. Plants reach 40–80 cm and produce delicate panicles that move elegantly in the breeze, making them outstanding as cut flowers. It thrives in a sunny to lightly shaded position and benefits from stratification before sowing for even germination.

Growing

Stratify seeds in the refrigerator for 2–3 weeks before sowing to improve germination uniformity. Sow seeds shallowly indoors at 0.5 cm depth once soil temperatures reach 15 °C — typically around 6 weeks before the last expected frost. Germination takes 10–30 days. Transplant outdoors once nights stay reliably above 10 °C, spacing plants 30–45 cm apart in all directions.

Care

Water moderately and consistently during establishment; once rooted, the plant tolerates short dry spells. No feeding is necessary on average garden soils, but a balanced liquid fertiliser once after transplanting supports vigorous stem development. No staking is required for compact varieties up to 80 cm.

Harvest

Cut stems for fresh arrangements once the panicles are fully open and plumed. Stems hold their shape well both fresh and dried. For dried bouquets, harvest just before the panicles reach full maturity and hang upside down in a dry, airy spot.

In the kitchen

Used primarily as a cut flower and dried ornamental grass in arrangements and bouquets. The feathery panicles add texture and movement to fresh floral designs and retain their form excellently when dried.

Storing

Fresh-cut stems keep for up to 10 days in a vase with clean water. For dried use, hang bunches in a dark, ventilated room; dried panicles hold their form and colour for several months.
