Glycine max

Soybeans (edamame) are tender annual legumes native to East Asia, grown for their protein-rich pods and beans. Harvested young and green, they are prized as edamame — sweet, slightly nutty, and exceptionally nutritious. In Nordic gardens, early varieties selected for cool summers give reliable harvests when pods are picked immature. Plants are compact and upright, fixing atmospheric nitrogen as they grow.

Growing

Sow directly into warm soil once it has reached at least 12 °C — ideally 16 °C — to prevent seed rot. Push seeds 3–5 cm deep and space plants 30–40 cm apart in rows 45–60 cm apart. Choose a sunny, sheltered position. Germination takes 7–10 days at optimal temperature. In short-season climates, select early varieties (70–80 days to maturity) to ensure harvest before cooler weather sets in.

Care

Keep soil consistently moist during flowering and pod fill — water deeply but avoid waterlogging. Soybeans fix their own nitrogen, so heavy feeding is unnecessary; apply a balanced fertiliser only on very poor soils at sowing. Stake plants on exposed sites. Weed diligently until the canopy closes. Mulch to retain soil warmth and moisture.

Harvest

For edamame, harvest pods when seeds have visibly swelled and fill the pod but are still bright green and tender — pods should feel plump and firm when squeezed. Pick the entire plant or snap individual pods. For fully mature dry beans, allow pods to yellow and rattle on the plant before pulling the whole plant to dry in a sheltered, airy place.

In the kitchen

Boil or steam edamame pods for 4–6 minutes in salted water, then drain and serve in the pod with flaky sea salt. Shell the beans to add to salads, grain bowls, stir-fries, soups, or hummus. Edamame has a sweet, nutty flavour and is exceptionally high in protein. Dry soybeans can be used to make tofu, soy milk, or miso.

Storing

Fresh edamame pods keep in the refrigerator for up to 3 days. For longer storage, blanch pods for 2 minutes, cool rapidly, and freeze for up to 12 months. Dry mature beans store in an airtight container in a cool, dark, dry place for up to 2 years.
