China Pink

China Pink (Dianthus chinensis) is a flowering annual grown for its frilly, fragrant blooms in a wide spectrum of reds, pinks, and bicoloured patterns with white highlights. Plants reach 30–50 cm tall and produce reliable first-year flowers from seed. It thrives in full sun with good drainage and tolerates light frost. An excellent choice for borders, containers, and cut flowers.

Growing

Start seeds indoors 8 weeks before transplanting outdoors, once nights stay above 5 °C. Sow on the surface or at a depth of no more than 3 mm in a well-draining seed-starting mix at a soil temperature of at least 15 °C; germination occurs in 7–14 days. Transplant seedlings into their final position at a spacing of 25 cm once they have 3–4 true leaves and outdoor temperatures are stable. For direct sowing outdoors, wait until soil reaches 15 °C.

Care

Water moderately, allowing the top layer of soil to dry slightly between waterings — China Pinks dislike waterlogged roots. Apply a balanced liquid fertiliser every 3–4 weeks during active growth. Deadhead spent blooms regularly to maintain continuous flowering. No staking is needed for most compact varieties. Mulch lightly around the base to retain soil moisture.

Harvest

Cut stems when the outermost flowers on a cluster are fully open and inner buds are showing colour. Harvest in the early morning for the longest vase life. Remove individual spent flowerheads on plants grown for garden display to encourage new flushes over a 30-day or longer harvest window.

In the kitchen

China Pinks are primarily ornamental cut flowers, ideal for detail work in small floral arrangements and mini tabletop bouquets. The petals are edible and can be used as colourful garnishes on salads and desserts; remove the bitter white base of each petal before use.

Storing

Keep cut stems in clean water in a cool location away from direct heat; change the water every two days. As cut flowers, blooms last 5–7 days in the vase. Dried petals can be stored in an airtight container in a cool, dark place for several months.
