Elegant Clarkia

Elegant Clarkia (Clarkia unguiculata) is a slender annual wildflower native to California, belonging to the Onagraceae family. It produces delicate, double blooms in shades of pink and rose carried in the leaf axils along upright stems reaching 60 cm. A cool-season annual, it thrives in full sun and tolerates most well-drained soils without heavy feeding. It is equally valued as a long-lasting cut flower and a charming border plant.

Growing

Direct-sow into prepared outdoor soil once soil temperature reaches 8 °C. Sow seeds thinly at 0.5 cm depth, pressing lightly into the surface as seeds need some light contact with soil. Thin seedlings to 20 cm apart once they reach 5 cm tall. Avoid transplanting; clarkia dislikes root disturbance and performs best when direct-sown. Row spacing of 40–60 cm gives good air circulation.

Care

Water moderately and consistently, allowing the top centimetre of soil to dry between waterings — clarkia tolerates short dry spells better than waterlogging. No supplemental feeding is necessary in average garden soil; rich soils produce leafy plants with fewer blooms. Pinch growing tips when plants reach 15 cm to encourage bushier growth and more flower stems. Stake plants gently if exposed to wind.

Harvest

Cut stems when the lowest one or two flowers on the spike have opened fully and upper buds are showing colour. Harvest in the early morning with clean, sharp scissors. Flowers continue opening along the stem after cutting, extending vase life. Deadhead spent blooms on plants left in the border to extend the flowering display.

In the kitchen

Elegant Clarkia blooms are edible and can be used as a delicate garnish on salads, desserts, and cold plates. Use freshly picked, fully open flowers and rinse gently before serving. Their mild flavour makes them suitable for crystallising with egg white and fine sugar for cake decoration.

Storing

As cut flowers, place stems immediately in clean water; vase life is 5–7 days in a cool room away from direct heat. Change water every two days. Do not refrigerate cut stems below 5 °C. Seeds harvested from dry capsules store well in a sealed paper envelope kept in a cool, dark, dry place for up to three years.
