Chinese Cabbage
Brassica rapa var. pekinensis
Chinese cabbage (Brassica rapa var. pekinensis) is a fast-growing cool-season brassica forming tall, cylindrical heads with bright green outer leaves, broad white midribs, and a crisp, pale yellow-green interior.
It thrives in full sun with consistently moist, fertile soil.
Both open-pollinated heritage types and compact modern hybrids are available, ranging from 30–40 cm tall heads to dense barrel-shaped forms.
It bolts readily in long days and warm temperatures, making direct sowing timing critical.
Growing
Direct sow seeds 1 cm deep into well-prepared soil once soil temperature reaches at least 10 °C.
Thin or space plants to 30 cm apart within rows, with rows 50–70 cm apart.
For autumn crops, direct sow later in the season when day length is shortening and temperatures are cooling — this is the preferred approach, as early sowing in long-day conditions causes bolting.
Seeds germinate in 4–7 days.
Indoor raising is not typically needed; direct sowing into the final position gives the best results.
Care
Keep soil evenly moist throughout growth — inconsistent watering causes tip burn and poor head formation.
Apply a balanced fertiliser at planting and a nitrogen-rich top dressing once plants are established.
Mulch around plants to retain moisture and suppress weeds.
Watch for cabbage caterpillars, slugs, and aphids; use row cover to exclude butterflies.
Avoid waterlogged conditions as roots are prone to rot.
Harvest
Harvest when heads feel firm and dense when squeezed and reach 30–40 cm in height.
Cut at the base with a sharp knife.
The outer leaves should still be turgid and green.
Heads tolerate a few nights of light frost before harvest but must be fully thawed before cutting.
Do not leave mature heads standing too long as they may crack or begin to bolt.
In the kitchen
Shred raw into salads and slaws for a crisp, mild flavour.
Use in stir-fries, soups, and hot pots where it wilts quickly and absorbs surrounding flavours.
Excellent for kimchi and other lacto-fermented preparations.
Blanch briefly before adding to noodle dishes.
The broad white ribs and soft interior leaves can be used separately — ribs for longer cooking, leaves for quick wilting.
Storing
Store whole heads unwashed in the refrigerator at 0–4 °C wrapped loosely in paper or in a ventilated bag; they keep for 3–4 weeks.
Cut heads deteriorate faster — use within a week once cut.
For longer preservation, ferment into kimchi or pickle in brine.
Blanched leaves can be frozen for up to 3 months.
